NEVER submerge cutting boards in water - not even for a second!  This will cause the cutting board to crack. Wipe with a warm wrung out soapy dish cloth and towel dry. NEVER put any hot pans or anything metal on cutting board. NEVER put the cutting board in the dishwasher.

Monthly Maintenance: Rub entire cutting board with a good food grade mineral oil and let it soak in. Wipe off excess with a clean dry cloth. Refinish the board using this simple paste finish: blend 1 cup of mineral oil with 2 ounces of melted pure beeswax, and allow to cool into a paste. Rub a small amount of the paste into both sides of the board. This will leave a shiny wax barrier and help keep the mineral oil from dissipating. Let stand for 5-15 minutes before wiping off the paste with a dry cloth or paper towel. Buff out to obtain a shiny finish. Never use vegetable based oils. They will go rancid over time and can cause a health hazard.

Even the best wood cutting boards will develop some unevenness over time, due to knife wear and environmental changes.  To restore the board to its original smoothness, perform the following maintenance: rub the entire board with mineral oil. Use a finish sander and 320 wet/dry sandpaper, or apply hand pressure and sand in long strokes the length of the cutting board until smooth.  Wipe off the excess oil with a dry cloth or paper towel, and then reseal the board with the beeswax paste blend as shown above.
